This recipe is from vidarbha (eastern region of Maharashtra). I have learnt this yummy curry from my lovely sister-in-law Shalini. This is very simple and healthy curry, goes superb with plain rice.
Serving for -2
Palak / Spinach - 1/2 bundle (Wash the spinach and chop roughly)
Besan / gram flour - 1 tbsp
Small tomato - 1 (cut into cubes)
Green chilies - 2-3 (finely chopped)
Cloves of garlic - 4 (minced)
Turmeric powder - 1/4 tsp
Oil - 1 tbsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Pinch of asafoetida
Salt to taste
- Add spinach, 2 cups of water, turmeric powder, green chilies, tomato and salt to taste in a pressure cooker. Cook till 2 whistles. Once the pressure goes away, open the lid. Mash the spinach little bit by adding more water if required.
- Heat oil in a pan. Add mustard seeds, pinch of asafoetida and cumin seeds. Let them splutter. Add minced garlic and saute for few seconds. Add in cooked spinach along with water in it. Bring it to boil. Add besan and mix well. Let it cook for 5 minutes. Serve hot with plain rice.
